The spread is the point. A cup of honey weighs four times a cup of rolled oats — 340 g against 90 g. So "1 cup" tells you almost nothing about weight unless you also know what is in the cup, which is why the converter above asks for the ingredient before it will give you grams.

These are typical figures rather than constants. Sifted flour is lighter than scooped, brown sugar depends entirely on how firmly it is packed, and desiccated coconut varies between brands. Treat them as good starting points, not exact values.

Australia's tablespoon is the odd one out. It was rounded to 20 mL at metrication — a neat four teaspoons — while nearly everywhere else settled on 15 mL. That makes an Australian tablespoon 33% larger, and three of them is 60 mL against roughly 44 mL for three American ones. In a spice mix or a raising agent, that difference shows.

The practical consequence: an Australian recipe calling for a tablespoon of baking powder wants 20 mL, and using a 15 mL spoon under-doses it by a quarter. Both sizes are in the converter, labelled.

At 5 mL it is one fiftieth of an Australian cup, which is why a recipe error in teaspoons of salt or baking powder matters so much less than the same error in cups — and why measuring spoons are worth owning rather than approximating with cutlery. Weigh It If You're Baking

Baking is chemistry with a tolerance, and volume measurement of dry ingredients is the least reliable part of most recipes.

The same cup of flour can vary by 20%. Scoop it straight from the bag and you compact it — often 140 g or more. Spoon it in lightly and level it off and you get around 120 g. Sift first and it can drop below 115 g. Nothing in the recipe tells you which the author did, which is why professional and published baking recipes increasingly give grams.

Liquids are far more forgiving — water, milk and oil fill a cup consistently, so volume measurement is fine for them. It is the powders that misbehave.

A set of digital scales costs less than a set of measuring cups and removes the ambiguity entirely. Weigh into the bowl, zero between ingredients, and the recipe becomes repeatable. If you bake often, this single change improves consistency more than any technique.

Multiplying ingredients is arithmetic. Everything else about a scaled recipe needs judgement.

Halving a recipe with three eggs is the classic problem. You cannot use one and a half eggs sensibly by eye — beat one egg, weigh it, and use half the weight. A large egg is roughly 50 g out of shell, so 25 g is a fair half. The scaling buttons above apply to whatever you are converting; the judgement calls stay yours.

Strong flavours are the other exception. Doubling a recipe rarely means doubling chilli, garlic or spices — start at 1.5× and adjust, because perceived intensity does not rise linearly with quantity.
